A beef share is a portion of a locally raised cow that provides a variety of premium cuts, including steaks, roasts, and ground beef. Instead of buying individual packages, you purchase a share of the live animal (whole, half, or quarter) and receive custom-cut, professionally packaged, freezer-ready beef—offering better value, quality, and a direct connection to ethical, family-run ranching in southern Arizona.
The cuts and weights listed below are provided as examples only. Actual cuts, quantities, and weights will vary based on the final hanging weight of the individual animal and the butcher’s standard cutting practices. No two animals are exactly alike, and final share contents may differ slightly from the example shown.
T-Bone- 8-9 lbs or roughly 9-10 steaks
Brisket- 8 lbs
Tri Tip- 2-3 lbs
Flap Meat- 2-4 lbs
Chuck Roast- 20 lbs (each roast os roughly 2-4 lbs)
Flank Steak- 1-2 lbs
Skirt Steak- 1.5-2 lbs
Stew Meat- 10-11 lbs (each package is roughly 1-1.5 lbs)
Tenderloin Steak- 5-6 lbs (each package is roghly .5-1 lb)
Porterhouse Steak- 7-8 lbs or roughly 6 steaks
Chuck Steak- 26-27 lbs (each package is roughly 2-4.5 lbs)
Ground Beef- 70-80 lbs (1 lb packages)

Understanding Hanging Weight
Hanging weight is the weight of the animal after harvest, once the hide and internal organs are removed. This weight is used to calculate the price of a beef share. As the beef is aged and processed, some weight is naturally lost due to moisture loss, trimming, and bone removal. Because of this, the amount of beef you take home is typically about 60–75% of the hanging weight. This is normal and part of producing high-quality, well-aged beef.
